Dried vegetable broth
1 leek
2 tomatoes
1 carrot
1 onion
6 cloves garlic
3 celery stalks
greens of choice
Preparation:
- Anything that fits into the broth can be included in this recipe. The basic ingredients are, of course, carrot, onion, leek, celery, but in addition to these, you can safely dry mushrooms, ginger, various herbs, celery root, cabbage, etc.
- Cut all the vegetables into fine slices. It is preferable to use a vegetable slicer and use its thinnest setting. If there is none, thinly slice everything with a very sharp knife and arrange on drying trays.
- Dry for 12 hours at 60ºC or until all the vegetables are completely dry.
