Oven-baked prawn dumplings

Ingredients for 12 dumplings:

400 g fresh prawns
1 teaspoon fresh ginger, chopped
2 tablespoons green chives, chopped
2 cloves garlic, chopped
1 egg
1 tablespoon rice flour
salt

For the dough

200 g wheat flour
140 ml of water
salt

Dressing

50 ml teriyaki sauce
30 ml soy sauce
1 tablespoon brown sugar
juice of ½ lime
½ teaspoon dried crushed garlic
2 tablespoons oil

Preparation:

  1. Make the dough: Mix all the ingredients and knead thoroughly for at least 5 minutes until the mixture is completely homogeneous. Place in a bowl and cover with a damp towel, leaving it to rest for at least 1 hour.
  2. Prepare the filling: In a pan with oil, fry the chopped garlic, ginger, and shallots. Allow them to cool. Grind the prawns in a meat mincer on the coarse setting. Add the egg, fried ginger, garlic, chives, a pinch of salt, and mix everything together.
  3. Make the sauce: In a small saucepan, heat all the sauce ingredients, stirring, until the sugar dissolves.
  4. Make the dumplings: Divide the dough into 12 equal parts, roll out into circles about 1 mm thick, place 1/12 of the prawn mixture in the middle, and seal. Brush all the dumplings with oil and bake in the oven at 180°C for about 20 minutes or until golden brown.
  5. Serve with sauce.
