Cardamom cheesecake with orange syrup

Tip! In this recipe, it is recommended to use cardamom seeds and grind them yourself! This will give you completely different aromatic and flavor qualities.

Ingredients for a 20 cm diameter cake:

800 g cream cheese
200 g sugar
1 g ground cardamom seeds
4 eggs
200 g sour cream
Zest and juice of 1 orange
Sugar

For the crust:

250 g digestive biscuits
100 g melted butter

Preparation:

  1. Crush the biscuits in a blender and mix with the melted butter. Place the mixture in a 20 cm diameter cake pan, pressing it firmly to form a base with high edges.
  2. In a bowl, mix all the ingredients for the cake filling, except the orange juice, and pour the mixture over the biscuit base.
  3. Bake the cake at 160°C for about 1.5 hours. The center of the cake should remain slightly soft— it will firm up as it cools.
  4. While the cake is baking, squeeze the juice from the peeled orange, add an equal amount of sugar, transfer to a small saucepan, and cook for 1–2 minutes.
  5. Pour the finished syrup over the baked cake.
