Brown rice and sesame bread

Ingredients for 500g bread:

235 g wheat flour
70 g brown rice cooked at room temperature
20 g white and dark sesame seeds
200 g water at room temperature
50 g olive oil
5 g sea salt
10 g sugar
4 g dry yeast

Preparation:

  1. First, place the wet ingredients – water, oil, sugar and salt – in the baking dish.
  2. Then add the rice, sesame seeds, wheat flour and dry yeast.
  3. Set the dough mode in the oven with a 25-minute timer.
  4. Then set the fermentation mode with the 30-minute timer.
  5. Then set the baking mode and set the timer for 1 hour 45 minutes and medium or dark loaf (optional).
  6. When the bread is ready, remove it from the baking dish and chill for at least 1 hour before slicing.

 

If you plan to bake bread with a delayed start timer, be careful with the bread spatula for kneading the dough. It can stay in the bread crumb. To avoid this, it is advisable to remove the spatula at the beginning of the rising process.
