Beef jerky marinated in honey and garlic
1 kg lean beef (ham or pork chop)
80 ml soy sauce
2 tablespoons honey
4 garlic cloves, finely chopped
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
Preparation:
- Beef is placed in the freezer for 30–60 minutes to make it easier to slice. It is then sliced into 4–6 mm thick slices.
- In a bowl, mix together the soy sauce, honey, garlic, Worcestershire sauce, and smoked paprika. Add the meat and mix thoroughly. Marinate in the refrigerator for 6–12 hours.
- Remove the meat from the marinade and gently pat it dry with a paper towel to remove any excess liquid.
- Arrange the slices in a single layer on the dehydrator trays, leaving a small space between each piece. Dry at 70 °C for 5–8 hours. The jerky is ready when the meat is dry, flexible, but does not break, and does not release any liquid when bent.
- Store in an airtight container at room temperature for up to 1 week, or in the refrigerator for 2–3 weeks.
