Zucchini fries with cheese sauce

Ingredients for 3 servings:

Zucchini fries:
2 medium zucchini
2 lightly beaten eggs
40 g flour
80 g panko breadcrumbs
1 tsp paprika
½ tsp garlic powder
Pinch of salt, pepper
Oil spray

For the cheese sauce:
30 g butter
1 tbsp flour
200 ml milk
120 g grated cheddar cheese
½ tsp mustard
Pinch of salt, pepper
½ tsp ground nutmeg
Parsley for serving

Preparation:

  1. Cut the zucchini into long sticks, mix with the spices — paprika, garlic powder, salt, and pepper, then coat in flour, egg, and panko. Preheat the air fryer to 200 °C, spray the zucchini with oil and cook for 12–15 minutes until golden brown.
  2. Meanwhile, prepare the cheese sauce — melt butter in a saucepan, add flour and cook for 1 minute, stirring. Gradually pour in the milk, stirring to prevent lumps. When the sauce thickens, add the grated cheddar cheese and stir until melted. Add mustard, salt, and pepper.
  3. Serve the zucchini fries with cheese sauce, sprinkled with chopped parsley.
