Cheese aioli sauce

Ingredients for 6-8 servings:

for aioli sauce
180 ml of oil
2 egg yolks
1 teaspoon Dijon mustard
juice of ½ lemon
½ teaspoon salt
2 cloves garlic
100 g sour cream
100 g grated cheddar cheese

for serving
fresh or pickled jalapeño peppers
sliced tomato
greens, kinza or parsley leaves
tortilla chips

Preparation:

  1. Place all the aioli sauce ingredients in a blender and blend until smooth.
  2. Add the sour cream and grated cheese, then stir to combine.
  3. Serve with tortilla chips, jalapeño pepper slices, finely chopped tomato, and herbs.

 

  1. Tip: the sauce can be used cold or heated if you desire a “sharp” cheese flavor. In that case, the sauce definitely does not need to be boiled, but heated until the cheese melts.
