Cheese aioli sauce
Ingredients for 6-8 servings:
for aioli sauce
180 ml of oil
2 egg yolks
1 teaspoon Dijon mustard
juice of ½ lemon
½ teaspoon salt
2 cloves garlic
100 g sour cream
100 g grated cheddar cheese
for serving
fresh or pickled jalapeño peppers
sliced tomato
greens, kinza or parsley leaves
tortilla chips
Preparation:
- Place all the aioli sauce ingredients in a blender and blend until smooth.
- Add the sour cream and grated cheese, then stir to combine.
- Serve with tortilla chips, jalapeño pepper slices, finely chopped tomato, and herbs.
- Tip: the sauce can be used cold or heated if you desire a “sharp” cheese flavor. In that case, the sauce definitely does not need to be boiled, but heated until the cheese melts.
