Apple, carrot, beetroot and turnip salad with herbs

Ingredients for 4 servings:

200 g fresh beetroot
200 g apples
200 g carrots
200 g turnips
200 ml extra virgin olive oil
a handful of mint
a handful of parsley
1 clove garlic
1 tablespoon honey
juice of 1 lemon
1 teaspoon salt
1 tablespoon horseradish
50 g cedar nuts or roasted seeds such as sunflower

Preparation:

  1. Install a food processor fitted with a grating attachment. Use the finest tip for hard vegetables and the coarsest tip for soft vegetables.
  2. Grate all the vegetables and set them aside.
  3. In a small bowl, prepare the dressing by mixing together the oil, honey, lemon juice, salt, horseradish, minced garlic, chopped herbs, and chopped nuts or seeds.
  4. Toss the grated vegetables with the dressing until well combined.
  5. Serve the salad immediately.
