Stuffed potatoes with bolognese sauce

Ingredients for 4 servings:

400 g Bolognese sauce
4 small sweet potatoes or sweet potatoes
200 g canned red beans
100 g good melting cheese
sprouts for serving

Preparation:

  1. Wash and dry the sweet potatoes thoroughly. Brush with oil, place in a baking dish and bake in the oven at 200 ºC or in an air fryer until soft with the skin on. Cool slightly in the same baking dish and cut each lengthwise in the middle so that it can be opened slightly.
  2. In a bowl or saucepan, mix the Bolognese sauce with the beans, which are mixed into the sliced potatoes. Top with grated cheese and place in the oven or air fryer for a few minutes to melt the cheese.
  3. Serve with sprouts and sour cream, if desired.
