Hot sauce
Ingredients for a 500 ml jar:
200 g fresh red chilli peppers
50 g fresh habanero pepper
3 cloves garlic
1 medium shallot
300 ml apple cider vinegar
100 ml of water
1 teaspoon salt
2 teaspoons sugar
Preparation:
- Place the finely chopped chili pepper (including all seeds), chopped garlic, finely chopped onion, and all remaining ingredients in a saucepan. Cook over medium-low heat for 20 minutes or until the pepper is soft.
- Transfer the entire mixture to a blender and blend until smooth.
- If a sauce without visible thickening and seeds is desired, pass the sauce through a sieve.
- Pour the sauce into a previously sterilized container. The sauce can be kept for up to 6 months in the fridge.
