
Apple, carrot, beetroot and turnip salad with herbs
Ingredients for 4 servings:
200 g fresh beetroot
200 g apples
200 g carrots
200 g turnips
200 ml extra virgin olive oil
a handful of mint
a handful of parsley
1 clove garlic
1 tablespoon honey
juice of 1 lemon
1 teaspoon salt
1 tablespoon horseradish
50 g cedar nuts or roasted seeds such as sunflower
Preparation:
- Install a food processor fitted with a grating attachment. Use the finest tip for hard vegetables and the coarsest tip for soft vegetables.
- Grate all the vegetables and set them aside.
- In a small bowl, prepare the dressing by mixing together the oil, honey, lemon juice, salt, horseradish, minced garlic, chopped herbs, and chopped nuts or seeds.
- Toss the grated vegetables with the dressing until well combined.
- Serve the salad immediately.
