Non-Alcoholic Eggnog
Ingredients for 1 litre bottle:
4 eggs
100 g of sugar
500 ml whole milk (minimum 3% fat)
250 ml sweet cream
½ teaspoon cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla extract or 1 vanilla pod
pinch of salt
Preparation:
- In a blender jug, place eggs, sugar, vanilla extract (if using a pod, add it later), cinnamon, nutmeg and salt. Blend until smooth and creamy.
- Add the whole milk and double cream. Blend until everything is mixed into a light, frothy mixture.
- Pour into a saucepan and heat whilst stirring (if using a vanilla pod, at this point cut it in half lengthwise and add it to extract). It’s important not to boil this mixture, but rather to heat it whilst stirring actively, so that the eggs are heat-treated.
