Bolognese soup with pasta
Ingredients for 4 servings:
700 g Bolognese sauce
1 litre stock of your choice
150 g Tubetti rigati or other small pasta
50 g hard cheese
Preparation:
- Place the Bolognese sauce in a saucepan, add the stock and bring to the boil. Then add the pasta and cook until almost ready.
- Remove the pan from the heat and leave it to simmer for a while, as the pasta will still swell.
- Serve in bowls with grated hard cheese and, if desired, fresh basil. If you prefer a creamier soup, you can add a spoonful of ricotta cheese.
