Cauliflower “rice” with cedar nuts
Ingredients for 4 servings:
1 cauliflower
2 shallots
2 cloves garlic
½ teaspoon salt
½ teaspoon cumin
2 tablespoons lemon juice
bunch parsley
60 g toasted cedar nuts
3 tablespoons olive oil
Preparation:
- The cauliflower is cut into smaller pieces and grated into a rice or couscous consistency using a vegetable shredding blade.
- Fry the onion and garlic in a heated and oiled pan over medium-high heat until golden.
- Then add the cauliflower and continue to fry over medium-high heat until soft and golden.
- Remove the pan from the heat. Add salt and cumin.
- Let them cool slightly and add the lemon juice, parsley and toasted cedar nuts. Stir everything together so that the flavours blend well. Can be served warm or cool.
