Vegetarian Nuggets

Ingredients for 4 servings:

400 g chickpeas
110 g flour
100 g grated zucchini
80 g grated carrot
1 onion
2 eggs
50 g breadcrumbs
1.5 teaspoons salt
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon oregano
Oil for frying

Preparation:

  1. Add all ingredients to a food processor and blend until combined. Be careful not to overmix—the mixture should be moist but not runny, making it easy to scoop with a spoon.

  2. Heat oil in a pan over medium heat.

  3. Using a tablespoon, scoop the mixture into the hot oil.

  4. Fry for 3–5 minutes on one side, then flip and fry the other side for another 3–5 minutes, until the nuggets are golden brown.

  5. Serve warm with your favorite dipping sauce.
