Crepes with orange and butter sauce
Ingredients for 4 servings:
2 eggs
180 g wheat flour
1 teaspoon sugar
pinch salt
80 ml cold water
120 ml milk
2 tablespoons oil
2 tablespoons soft butter
For the orange sauce:
110 g butter
70 g sugar
2 tablespoons finely grated orange peel
80 ml fresh orange juice
Preparation:
- Make the dough. Put the eggs, milk, water, sugar and salt in a food processor. Using the whisk attachment, mix everything into a smooth paste. Then add the flour, and blend again to a homogeneous mass. Finally, add the oil and soft butter and beat until everything is combined into a homogeneous dough.
- Heat a frying pan over medium-high heat, grease it with butter and fry the crepes. Pour in about 45 ml, and quickly spread the batter evenly in the pan with a deft hand movement. Fry on both sides until golden brown and beautifully speckled.
- In parallel, make the butter sauce: melt the butter and sugar in a saucepan. Add the orange zest and squeezed juice. Cook over a medium heat until the mixture starts to bubble and thicken slightly.
- Arc the crepes into triangles and serve with butter and orange sauce.
